Breakfast Treats

This little breakfast/brunch recipe combines all my fave things, eggs, avocado, tomatoes and parma ham. In my eyes, its the best weekend breakfast meal ever! But i’m a little bias i guess! It’s super easy, super quick, and requires hardly any cooking at all. The best way to impress someone with breakfast in bed but using very little energy!

Come one……you can’t tell me that doesn’t look amazing!!! I’m drooling just at the sight of it!!!

You drooling too? Wana make one? I know you do! Well your in luck! That’s exactly what i’m going to do! First here’s what you’ll need.

For two people (two portions each) you will need:

1 loaf of ciabatta bread

1 ripe avocado

4 eggs

1 packet of parma ham

A handful of vine tomato’s, roughly 8, 4 each, but that amount doesn’t really matter.

Start by slicing your avocado in half, remove the pip and the skin and then slice thinly. You want it thin enough that you can mush it up with a fork.

If your making enough for two people then use the whole avocado, otherwise just use half. Next you want to grab your tomato’s. If your using vine ripe little ones like me, then chop them into 4. If your using bigger ones then just make sure again they are small enough to smush.

Next, grab yourself a bowl and pop your sliced and diced avo and tomato’s in. Now for the fun part! Grab a fork and start mushing them together. You want a consistency that’s lumpier than guacamole, but you want it to all be mixed up and semi spreadable.

Now sadly i didn’t do this, as i forgot to pick up a lemon, but if you have one, squeeze some lemon juice in here as it will give it a lovely zesty taste.

Set this to one side and start slicing your ciabatta. You want two piece’s per person. Don’t slice it too think as this is a pretty filling meal anyway.

Feel free to butter the bread if you prefer, but you don’t need to really.

Grab your avocado and tomato mixture and just spoon it onto your ciabatta. Be generous with it, its the best part!

Next your going to need your parma ham. Pop one piece on top of each of your avo covered bread.

If your a veggie, or just not a fan of parma ham (WHY THE HELL AREN’T YOU!?) then you can leave this off, or try adding mozzarella instead.

Now you could just leave it here and this would still be an amazing meal. But oh no! Were going to add one more delicious, mouth watering ingredient. A perfectly poached egg.

Grab a pan and fill it half way with boiling water. You can add a pinch of salt to the water if you wish. Once its boiled, grab your eggs and crack them directly into the boiling water.

The water will look pretty rank and go a white colour from the egg, that’s fine, don’t worry! Leave your eggs in there for a min and a half if you want a runny egg. Longer if you want it not runny.

Then just spoon it out, drain away the water and pop it on top of your amazing looking bread!

Munch away!!!! Yum yum and more yum!!! You can thank me later, first go wipe the runny egg off your face!! Enjoy!
